1. Is it really sour? Yes. The tartness/sourness comes from the lactobacillus (the same bacteria in yogurt) culture that we use. We can control how sour it gets from monitoring the pH.
2. How do you make it sour? We get a culture from a local dairy and sour the wort in the kettle overnight. Then we boil the soured wort to sanitize it and kill the bacteria. Then we dry-hop in the fermenter with a blend that changes each time we make it.
3. Is there citrus in here? No, but there are strong citrus and tropical notes (among others depending on the hops varietals). We dry-hop heavily in this beer to make it as aromatic as possible!
